Cookies.. well, we call them cookies because of the shape and texture, but they aren't a traditional sweet, dessert type cookie. But they aren't totally savory. They are... savory with a tinge of sweet, but not a sugary or fruity sweet, it's a warming sweet. Maybe you should just try them to see what they taste like? Note, a PDF is attached for easy printing.
Lentil Cookies
This recipe makes one cookie sheet full - enough for me to eat as the main meal for my lunch, but you can easily double it to serve. They store in the fridge for a few days.
Combine:
3/4 cup cooked red lentils (cook at a ratio of 1:4 - so I use 1/2 cup of red lentils to 2 cups of water. Cook until soft and store until fridge until needed)
1 flax egg (1 Tbsp ground flax seed combined with 3 Tbsp water, let stand for a few minutes to set)
1/2 tsp baking soda
1/4 + 1/8 tsp cinnamon
half of 1/8 tsp ground cloves
half of 1/8 tsp ground nutmeg
2 Tbsp+ 2 tsp maple syrup (or approximately 1/2 of 1/3 cup)
2 Tbsp + 2tsp olive oil (or approximately 1/2 of 1/3 cup)
splash of vanilla
Add:
3/4 cup oats (pulse in a food processor for a better texture but whole oats work as well)
3/4 cup whole wheat flour (we prefer einkorn for the nutrition and taste, but any whole wheat flour will work)
Mix well and then scoop onto a parchment-paper covered baking sheet. We use a small icecream scoop for a nice round shape.
Bake at 350 for 15 minutes.
They are good fresh from the oven, but if you store in a container after cooling, they get a little softer and even more delicious.

We love savory too AND anything with maple syrup. With red lentils on hand, we'll give these a try over the holiday.
