Since Mama is gluten intolerant, we use gluten-free flour and breadcrumbs, but you can use whatever works for your family. We want these recipes to be flexible and support everyone in enjoying delicious vegan food.
What if you don't have access to fresh basil? A small tip - buy fresh basil when you can (or grow it if you want), and wash the leaves. Lightly chop in food processor (or by hand) and put the chopped basil in a clean ice cube try. Freeze and then pop the basil cubes into a bag. These work well in recipes and you can just pop them in or defrost ahead of time.
Basil Bean Burgers
Ingredients:
2 cans cannellini beans, drained
½ c Gluten Free flour
1 c Gluten Free breadcrumbs
Salt
Basil – fresh – lots
Combine beans, salt and basil in food processor until smooth. Stir in flour and breadcrumbs. Lightly pan fry in neutral oil of choice (we use olive oil). Ca. 3 minutes per side. Cook times can vary depending on your taste. Oliver prefers lightly cooked; no brown spots!
Makes 9-10 medium size patties
Serve with toppings of your choice.
Mama prefers wrapped in a Boston lettuce leaf, with avocado slices and Dijon mustard.
Daddy likes his in a bun with lots of vegan mayonnaise.
