Made the mushroom burgers with mushrooms from Mushroom Queens at the Forest Hills Greenmarket - we're so lucky to have local produce and awesome people. seriously yummy.
I made the Pinto Bean Patties last evening for dinner. We used the mini patties to garnish basmati rice that I steamed with grated sweet potato and finely chopped kale. I played with the recipe a bit - grated the carrots, used less zucchini, diced finely, and added grated ginger. The amounts of beans and GF flour made the texture seem perfect and the smoked paprika was delicious. We have leftovers and will eat them in wraps for lunch today!
This is a wonderful book! Full disclosure: as Oliver's dad I have had the privilege of tasting many of these recipes, and I can vouch for how good they are. So much time and experimentation went into this book, I'm sure you will find the recipes delicious. And it's such a beautiful way to support animal awareness, and also a lovely contribution to making the world more livable for everyone, and every creature in it. Thank you for writing it!
